Generators
A generator of fats, oils and grease (F.O.G.) is any person (or organization) who causes, creates, generates or otherwise produces liquid waste, or a person who, for any reason, has liquid waste removed from his property by a transporter of liquid waste. Most generators fall into one of two categories:
Automotive Services (ASE)
Food Services (FSE)
- Automotive Service Establishment (ASE)
- Examples include car wash, service station, maintenance shop
- Food Service Establishment (FSE)
- Examples include restaurant, bakery, food truck (mobile food unit), grocery store with deli
Automotive Services (ASE)
Basic Maintenance Requirements
- Have grit trap/oil separator serviced at least every 180 days (or more often to meet the 25% rule)
- Only use a permitted Transported (Permitted Transporters are listed HERE)
- Retain manifests on file for a minimum of 3 years
Food Services (FSE)
Basic Maintenance Requirements
- Have grease trap/interceptor serviced at least every 90 days (or more often to meet the 25% rule)
- Only use a permitted Transported (Permitted Transporters are listed HERE)
- Retain manifests on file for a minimum of 3 years
Variance Request
In accordance with the City's Code of Ordinances, Chapter 38, Article VII, Section 38-143(d), generators may submit a variance request to the City for an exception to the required pumping frequency of their grease interceptor.
